Mango Monday

Decided to experiment with a recipe using mango's.  I'd gone to the market and found them for a good deal and while they're terrific by themselves, I wanted to make a bread with them but I couldn't find one.  So this is what I came up with. I went along a pound cake version so it's a heavy batter. I found that it only gets better each day. The full recipe I developed ended up making a bundt and a loaf pan- so I've cut it down to make a single bundt portion. Give it a try and let me know what you think.

Mango Bread

2/3 c. toasted walnuts
1 stick butter, softened
2 1/2 c. sugar
1/2 T. lemon juice
2 eggs
1/2 t. baking soda
1/4 c. buttermilk
2 c. diced mango
2 c. flour
1/4 t. salt
1 t. vanilla

Preheat oven to 325º.  Grease n flour a bundt pan and set aside.
In a large bowl, cream the butter and sugar with a mixer and add lemon juice.  Add one egg at a time and blend.  In a small bowl combine the buttermilk with the baking soda.  Now add this to the diced mango and let sit for 2 minutes.  When ready, add to the creamed mixture and mix well.  Add the dry ingredients and beat for 2 minutes.  Add vanilla and then stir in the walnuts.
Pour into the bundt pan and bake for 45 minutes - 1 hour or til done, (test with toothpick).
Cool for 10 minutes in pan on rack and then remove from pan and continue cooling on rack.

Notes:
  • to toast walnuts...place single layer on a cookie sheet and toast in a 350º oven for 2-4 minutes
  • make sure to GREASE and FLOUR pan (or else)
  • Store leftovers in an airtight container
