festive Brunch

Kids will be here on Thursday evening so you know I'll be cooking a storm. The plan is to have Mexican food all done by the time Jacob's flight gets in and hopefully Sarah and Landon will be way settled in by then.

Friday we'll start the day with a Christmas Eve Brunch, serving up a great menu and lots of wonderful friends.

Brunch Menu:
Texas Baked French Toast
Huevo Medley Casserole w/Belle's salsa fresca
Cozy Oinkers
Fruit Slush Cups
Christmas Sangria (my own version)
Horchata's (my traditonal Christmas beverage)

I'm sharing my festive drink recipe that I experimented with. It's different and refreshing.  Serve up & enjoy!

Belle's Christmas Sangria
  • Black Cherry Cranberry juice (Oceanspray) (64 oz) 
  • Ginger Ale (2 liter)
  • Black Cherry sparkling water or Regular Seltzer (if you can't find bc water) (33 oz)
  • pomegranate seeds from 1 fresh pomegranate
  • 1 thinly sliced orange
I chill everything including the seeds and orange slices the day before.  Then I combine all the liquid ingredients in a decorative decanter and add ice cubes and fruits right before serving.
Recipe can easily be doubled.
