bread machine treat


Decided I would try making a fruit based bread in my bread machine--the kind that doesn't need yeast or bread flour in it.  I've made several fruit breads before but the kind that require the rising due to the yeast, etc.  I attempted banana bread although I already have a family favorite banana bread recipe that's the traditional "by hand" method.
Give it a try and see what you think!

Banana "Simply Quick" Bread 
Bread Machine
3/4 c. sugar
2 c. flour
1 t. baking soda
1/2 t. baking powder
2 eggs
3 T. canola oil
2 bananas (diced large)
Place oil, eggs and bananas in first (in bread machine pan), then added the remainder of the ingredients.  Set your machine on dough and set timer for 4 minutes.  After the 4 minutes, using a spatula, scrape the sides of pan and if there are still dry unmixed spots, continue for another minute on the dough setting.  Do not mix longer than the required 4-5 min.  Now set your setting on "bake" and bake for about 50-60 minutes.
(Mine usually takes a little longer-it usually takes about 1 hr-1 hr 5 minutes)
 Check to see doneness with a toothpick.
Cool in pan for about 10 minutes after removing from machine. Remove and cool completely.
