Nothing tops the smell of fresh bread in the kitchen

Woke up this morning and made some delicious loaves of blueberry zucchini bread. YUM! It didn't just smell good but tasted wonderfully moist and full of goodness. Ate a slice with some hot green tea to start my beautiful Friday. Here is the recipe for those of you wanting to use up some fresh blueberries, I picked mine up for 99 cents a pint the other day. I cut back on the sugar as it originally asked for 2 1/4 c. which I think it way too much even at 2.

Blueberry Zucchini Bread
3 eggs, lightly beaten
1 c. oil
3 t. vanilla
2 c. sugar
2 c. shredded zucchini
3 c. flour
1 t. salt
1 t. baking powder
1 T. cinnamon
1/4 t. baking soda
1 pint fresh blueberries
Preheat oven to 350°. Lightly spray 2 loaf pans.
Mix together eggs, sugar, vanilla and oil until smooth. Gently fold in zucchini.
In a separate bowl blend together the dry ingredients.
Now mix those into 1st mixture.
Now gently fold in blueberries. Pour into prepared pans and
bake for 50 minutes or until done.
Cool in pans completely and remove and enjoy! ♥
